Lovingly tended by Sylvia Phillips the gardens at the Hundred House are wonderful. You will discover over 150 varieties of herbs, 15 times more than the in the lyrics of Scarborough Fayre! These herbs are vital to the food side of the business.
The herbs and flowers are picked daily to decorate the restaurant and brasserie tables and the bedrooms. Chefs exit the kitchen to select the herbs they need to compliment and inspire the daily menus. A scene of calm, yes, but with a true practical purpose as asparagus, peas, lemon balm, 8 different varieties of mint and sweet cicely are harvested to give a distinct edge to the food at the Hundred House.
Sylvia encourages the further growth of herbs and flowers so seeds from the garden are available "to go" and for a small donation to her favourite charity you can leave the Hundred House with a small piece of its essence. Take the seeds and plant them, remembering each time you cut the herb or flower to revisit our special place. |

| A Herb Garden Remembered |

| Down the old brick pathway, in Granny's |
|
garden still |
| The mint, the thyme, the rosemary. The |

marjoram, the dill. |

| The little girl remembers, soft fennel |
|
growing high, |
| Red bricks with creeping peppermint well |
|
trod, but small and shy. |

| Remember sunlit Sundays, being sent for |
|
sprigs of mint, |
| Young peas and new potatoes, "Bring |
|
plenty dear…don't stint" |

| Around the old herb garden, old sage and |
|
lavender too, |
| Was humming with a million bees, beyond |
|
where parsley grew. |

| The mint within the box-hedge, the parsley |
|
brightest green, |
| The purpling scented sage-bush, the dark |
|
yew hedge between. |
|
| Pick rosemary for remembrance, mauve- |
|
flowered the clumps of chives, |
| And down that old stone pathway, does |
|
purple thyme still thrive? |
