Learn from the County’s best Live Fire Expert, “Shropshire Lad”, Adam Purnell and our own Exec Chef, Stuart Phillips.
They’ll be demonstrating how to Roast, Grill, Smoke, Bake & BBQ over charcoal & wood using ancient Kadai firebowls, Big Barrel Drums & Weber BBQ.
You’ll have plenty of opportunities to get hands on too and being an intimate event, means you have 2 top-notch Chefs to yourself, a real personal experience!
A huge amount of food will be made (and consumed!) and you get to take home a goody bag too!
Course runs 9.30 am to approximately 4.30 pm with all food & refreshments during the day! Just £149 per person.
Below is a sample itinerary – dishes may change.
9.30am – Welcome with Coffee in Hundred House Bar, tour of the Herb Garden, find and learn what herbs to use in your days cooking.
10am – “Light my Fire” with Adam! How to get your Kadai fit to roast, grill, bake & BBQ using Oak, Cherry, Ash & Charcoal.
Morning session:
KadaI baked Focaccia, Rosemary, Garlic & Chives.
8 Rib Rack of Pork, slow grilled until crispy.
Find your herbs with Stuart to make your own Chimichurri spatchcock grill baste & plank Salmon Pate.
“Do the plank” with Ad! Nail your trout, salmon & herbs to the oak planks and slowly smoke around the edge of the firepit.
Surf & Turf! Goose Beef Skirt cooked dirty on white embers served with smoky buttered mussels.
Charred Asparagus & Sorrel Risotto with Stuart.
Around 1.30pm it’s time for some beers, wine plus the fruits of your labour!
Afternoon session:
Spatchcock your Chicken – sage baste
Make a dirty veg curry & Naans with Adam
Closing down your BBQ/firepit & looking after your genuine & ancient Kadai Firebowl
